Freshness and storage
Shoyuzuke is sashimi-grade salmon, served raw like any sashimi. Refrigerate the moment it arrives and enjoy it immediately. Once opened, consume within 2 days; sealed, keep at or below 4°C, or freeze at −12°C for up to 7 days. Do not refreeze after thawing.
